So sorry for the horrible blurry photo - I took it on a bumpy bus ride. I made this rice dish to take with us on our 16 hour bus ride from Bariloche to Mendoza. We never know if the bus will provide us with food during these long trips so we’ve been taking our own. Often times, we’ll get snacks of croissants, cake or overly sweetened coffee, so it’s best to just bring what we like and keep our sanity.

Rice with Beets, Cauliflower and Cilantro
3 cups brown (woohoo!) rice, cooked with 2 TBS each of curry and paprika (added during boiling)
1 large beet, boiled, peeled and chopped
1 small head cauliflower, chopped
1 large onion, chopped
2 cloves garlic, chopped
1 small bunch cilantro, chopped
1.5 TBS olive oil
salt and pepper to taste
-Heat a large saute pan with olive oil over medium heat and saute the onion until fragrant and soft. Add in the cauliflower and cook about 7 minutes, until soft but still with bite. Season with salt and pepper.
-During the last minute of cooking, add the garlic and beets. Toss the veggies with the rice and mix in the cilantro. This is great eaten cold as well.
